Tomato-Infused Hearty Meaty Bell Pepper Chili
ingredients
- 1 lb ground meat (beef or turkey)
- 3 bell peppers, diced
- 2 large tomatoes, diced
- 1 onion, finely chopped
- 4 cloves of garlic, minced
- 3 tbsp olive oil
- 3 tsp chili powder
- 2 tsp cumin
- 1 tsp paprika
- 1 tsp oregano
- 1/2 tsp cayenne pepper (optional, for spicy kick)
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)

Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until fragrant and translucent.

Add ground meat to the pot and cook until browned, breaking it into crumbles with a spoon.

Stir in diced bell peppers, tomatoes, chili powder, cumin, paprika, oregano, cayenne pepper (if desired), salt, and pepper. Cook until the peppers start to soften.

Reduce heat to low and simmer the chili, covered, for at least 30 minutes to allow the flavors to meld together. Stir occasionally.

Taste and adjust seasonings as needed. If you prefer a thicker chili, simmer uncovered for an additional 10-15 minutes.
