Herb-Roasted Cornish Hens with Citrus Glaze

- 6 Cornish hens
- 2 tablespoons olive oil
- 2 teaspoons fresh rosemary, chopped
- 2 teaspoons fresh thyme, chopped
- 2 teaspoons fresh sage, chopped
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 lemon, sliced
- 1 orange, sliced
- 4 cloves garlic, minced
- 1 cup orange juice
- ¼ cup honey
- 2 tablespoons Dijon mustard
- 2 tablespoons butter
- Fresh rosemary sprigs, for garnish

Preheat the oven to 375°F (190°C).

In a small bowl, combine the olive oil, chopped rosemary, thyme, sage, salt, and black pepper.

Rub the herb mixture over the Cornish hens, both on the outside and inside the cavity.

Place a couple of lemon and orange slices, along with minced garlic, inside the cavity of each hen.

Arrange the hens in a roasting pan, breast-side up.

Roast in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).

While the hens are roasting, prepare the glaze by combining orange juice, honey, Dijon mustard, and butter in a small saucepan over medium heat. Cook until the mixture thickens, about 5 minutes.

During the last 10 minutes of roasting, brush the hens with the citrus glaze, allowing it to caramelize.
