- 2 cups fresh mint leaves, loosely packed
- 2 cups fresh basil leaves, loosely packed
- 1 cup honey
- 1 gallon pure apple cider (not from concentrate)
- 1 tsp cinnamon
- 1/4 tsp cloves
- 1/4 tsp nutmeg
- 1 package mead yeast (or wine yeast)

Rinse the fresh mint and basil thoroughly to remove any dirt.

In a large pot, gently simmer the apple cider over low heat.

Stir in the honey until fully dissolved, then add the cinnamon, cloves, and nutmeg.

Once the mixture is warmed, add the fresh herbs and allow it to steep for 30 minutes to extract their flavors.

After steeping, remove from heat and let it cool to room temperature.

Strain the mixture through a fine mesh sieve or cheesecloth to remove the herbs, leaving you with a clear liquid.

Transfer the strained liquid to a sanitized fermentation vessel and pitch the mead yeast.

Seal the vessel with an airlock and let it ferment in a cool, dark place for 2-4 weeks, or until fermentation is complete.

Once fermentation is done, bottle the metheglin, ensuring to leave some air space in each bottle.
