- 3.5 lb. honey
- 1 egg white
- 3 Tbs. lemon balm
- 3 Tbs. hyssop
- 2 Tbs. clover flowers
- 2 Tbs. linden
- 2 Tbs. dried rosehips
- 2 Tbs. marjoram
- 1 Tbs. thyme
- 1 Tbs. whole hops
- 1 heaping cup dried elderflowers
- 1/2 cup chopped white raisins
- ale yeast

In a large pot, combine honey, herbs, and dried flowers with water to make a tea. Let it cool.

Strain tea into fermenting bucket, add egg white, raisins, and yeast. Stir well.
- 3.
Cover and let ferment for 4-6 weeks, then bottle and carbonate for another 2 weeks.
