Dutch Oven Cinnamon-Raisin Bread

- 2 cups warm water (110°F)
- 1 (4-oz.) envelope active dry yeast
- 3 Tbsp. light brown sugar
- 4 cups plus 5 Tbsp. all-purpose flour, divided
- 1 cup raisins
- 1 Tbsp. ground cinnamon
- 1½ tsp. kosher salt
- 3 ice cubes

In a large bowl, combine warm water and yeast. Let it sit for about 5-10 minutes until frothy.

Stir in light brown sugar until dissolved.

Gradually mix in 4 cups of flour, followed by the salt, cinnamon, and raisins.

Knead the dough on a floured surface for about 8-10 minutes, adding flour as necessary to achieve a smooth, elastic texture.

Form the dough into a ball and place it in a greased bowl. Cover with a damp cloth and let it rise in a warm place for 1 hour.

Preheat the Dutch oven at 450°F for 30 minutes.

After rising, punch down the dough, shape it into a loaf, and place it on a piece of parchment paper.

Add ice cubes to the bottom of the preheated Dutch oven (carefully!) and then place the covered loaf inside.

Cover and bake for 30 minutes. Remove the lid and bake for an additional 15 minutes until golden brown.
- 10.
Cool the bread on a wire rack for 2 hours before slicing.
