ingredients
- 1.25 gallons Water
- 4 pounds Monarch's Choice Wildflower Honey
- Irish moss finings
- Yeast Nutrient
- Acid Blend
- Wine Tannin
- ½ package Mead Yeast
steps
- 1.
Heat water to 160°F, remove from heat
- 2.
Dissolve honey in hot water, stir well
- 3.
Add Irish moss, yeast nutrient, acid blend, and wine tannin
- 4.
Chill mixture to 70°F, sprinkle yeast on top
- 5.
Cover and let ferment for 2-3 weeks
- 6.
Transfer to secondary fermenter, leave for additional 2-3 months
- 7.
Bottle and age for 6 months before serving
