ingredients
- 1 cup red lentils, rinsed and drained
- 2 cups water
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 2 cups fresh spinach, chopped
- 4 eggs
- Salt and pepper to taste
- Fresh cilantro, chopped for garnish

In a medium saucepan, combine lentils and water, and bring to a boil. Reduce heat and simmer for about 15 minutes or until lentils are soft.

While the lentils cook, heat olive oil in a non-stick pan. Add onion, garlic, and spices and sauté until onion is translucent.

Add spinach to the pan and cook until wilted.
- 4.
Mix the cooked lentils to the pan and stir well.
- 5.
In a small bowl, beat the eggs with salt and pepper to taste.

Pour the eggs into the lentil mixture and cook until set, stirring occasionally.
- 7.
Serve hot, garnished with fresh cilantro.
