Instant Pot Vegan Lentil Bolognese Spaghetti

This easy and delicious vegan spaghetti lentil bolognese recipe is ready in just 30-minutes using the Instant Pot. It's hearty, protein-packed, and perfect for a healthy weeknight dinner for the whole family.

- 8 oz spaghetti
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 small carrot, grated
- 1 small zucchini, grated
- 1 cup cooked lentils
- 1 can (14.5 oz) diced tomatoes
- 1 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper, to taste
- 2 cups vegetable broth
- Vegan parmesan cheese, for serving (optional)

Rinse and drain the lentils. Set aside.

Set Instant Pot to sauté mode. Once hot, add olive oil, garlic, carrot, and zucchini. Sauté for 2-3 minutes.

Add cooked lentils, diced tomatoes, tomato paste, oregano, basil, salt, and pepper, then mix everything well.

Add vegetable broth and stir until everything is well-combined.

Break the spaghetti in half and add them over the top of the lentil mixture in the Instant Pot. Do not stir.

Close the lid, turn valve to sealing position, and cook on manual high pressure for 8 minutes.

When done, do a quick release, carefully open the lid, and stir everything together.

Serve hot, garnished with vegan parmesan cheese, if desired.
