Iron-Boosting Omelette

This hearty breakfast omelette is packed with iron and vitamin C for a nutritious start to your day. Filled with spinach, bell peppers, and lean turkey sausage, this dish is both filling and flavorful.

- 4 large eggs
- 1/2 cup baby spinach
- 1/4 cup diced red bell pepper
- 2 oz turkey sausage, cooked and crumbled
- 1/4 cup shredded cheddar cheese
- 1 tbsp chopped fresh parsley
- Salt and pepper to taste
- 1 orange for squeezing over omelette

Beat eggs in a bowl and season with salt and pepper.

Heat a non-stick skillet over medium-high heat and spray with cooking spray.

Add the spinach and bell pepper to the skillet and sauté for 1-2 minutes until slightly soft.
