Colorful bell peppers stuffed with quinoa, black beans, veggies, and spices, baked to perfection.
ingredients
- 4 large bell peppers
- 1 cup quinoa
- 1 can black beans, drained and rinsed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup corn kernels
- 1 can diced tomatoes
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
steps

Preheat oven to 375°F.
- 2.
Cook quinoa according to package instructions.
- 3.
Sauté onion and garlic until translucent.
- 4.
Add corn, tomatoes, cumin, chili powder, salt, and pepper.
- 5.
Stir in cooked quinoa and black beans.
- 6.
Cut tops off peppers, remove seeds, and stuff with quinoa mixture.
- 7.
Place stuffed peppers in a baking dish, top with cheese.
- 8.
Cover with foil and bake for 30 minutes.
- 9.
Remove foil and bake for an additional 10 minutes.
- 10.
Serve hot and enjoy!
