ingredients
- 1 cup sushi rice
- 1 1/4 cups water
- 1/4 cup rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 can young green jackfruit, drained and shredded
- 1/4 cup soy sauce
- 1 teaspoon sesame oil
- 1/2 cucumber, julienned
- 1 carrot, julienned
- 1 avocado, sliced
- 4 sheets nori seaweed

Cook sushi rice according to package instructions. Once cooked, mix rice vinegar, sugar, and salt. Gently fold into rice.

In a pan, sauté shredded jackfruit with soy sauce and sesame oil until heated through.

Lay a sheet of nori on a bamboo sushi mat. Spread a layer of seasoned rice evenly on top.
