Roasted cauliflower and chickpeas in a tangy lime herb dressing with spinach for added freshness.
ingredients
- 1 head of cauliflower, cut into florets
- 1 can of chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- Zest and juice of 1 lime
- 2 tablespoons chopped fresh parsley
- 2 cups fresh spinach leaves
