Kim Wexler’s Green Chili Runza Sandwich

ingredients
- 1.5 lbs ground beef
- 1 cup green chili, roasted, peeled, and chopped
- 1 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp cumin powder
- 1 tsp smoked paprika
- 1 tsp oregano
- Salt and pepper to taste
- 2 cups sharp cheddar cheese, shredded
- 4 large dinner rolls or buns
- 4 tbsp butter, melted
- 1 tbsp sesame seeds (optional)

Preheat the oven to 375°F (190°C).

In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.

Add onion, garlic, cumin powder, smoked paprika, oregano, salt, and pepper to the skillet. Sauté until the onion turns translucent.

Stir in the roasted green chili and cook for an additional 5 minutes, allowing the flavors to meld.

Slice the dinner rolls in half horizontally, but not all the way through, creating a pocket.

Place a generous amount of the green chili and beef mixture into each roll pocket, then top with shredded cheddar cheese.
