Kimchi Taco Pancakes

- 1 cup Korean pancake mix
- 3/4 cup water
- 1/2 cup kimchi, finely chopped
- 1/2 pound marinated beef or chicken
- 1/4 cup mayonnaise
- 2 tablespoons gochujang sauce
- 1 cup shredded lettuce
- 1/2 cup sliced bell peppers
- 1/4 cup chopped green onions
- Vegetable oil for frying

In a bowl, combine the pancake mix and water until smooth. Stir in the chopped kimchi.
