- 9 lasagne noodles
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 zucchini, chopped
- 1 bell pepper, diced
- 4 cups fresh spinach
- 1 can (28 oz) crushed tomatoes
- 2 cups ricotta cheese
- 1 cup mozzarella cheese, shredded
- ½ cup grated Parmesan cheese
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- Fresh basil, for garnish (optional)

Preheat your oven to 375°F (190°C).

Cook the lasagne noodles according to package instructions, then set aside.

In a large skillet, heat olive oil over medium heat, adding onion and garlic until softened.

Add zucchini and bell pepper, sautéing for about 5 minutes until tender.

Stir in spinach and cook until wilted, then mix in crushed tomatoes. Season with Italian seasoning, salt, and pepper.

In a bowl, combine ricotta cheese with a pinch of salt and pepper.

Spread a thin layer of tomato mixture on the bottom of a baking dish. Layer 3 lasagne noodles, followed by half of the ricotta and one-third of the mozzarella.

Repeat layers twice more, starting with the tomato mixture and ending with noodles topped with remaining sauce and mozzarella. Sprinkle Parmesan cheese on top.

Cover with foil and bake for 30 minutes, then uncover and bake for an additional 15 minutes until golden and bubbly.
