Heavenly Banana Bread Bliss
ingredients
- 3 ripe bananas, mashed (about 450g)
- 75g melted butter
- 200g sugar (or brown sugar)
- 1 large egg, beaten (about 50g)
- 5ml vanilla extract
- 5g baking soda
- Pinch of salt
- 190g all-purpose flour
- 60g chopped nuts (walnuts or pecans) - optional
- 5g cinnamon - optional

Preheat the oven to 175°C (350°F) and grease a 9x5-inch (23x13 cm) loaf pan.

In a mixing bowl, mash the ripe bananas with a fork or potato masher until smooth.

Stir in the melted butter until evenly combined.

Mix in the sugar, beaten egg, and vanilla extract until the mixture is smooth.

Sprinkle the baking soda and salt over the batter, then mix again until incorporated.

Gradually add the flour, mixing gently until just combined; avoid overmixing.

If desired, fold in the chopped nuts and cinnamon for extra flavor.

Pour the batter into the greased loaf pan and smooth the top with a spatula.

Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.

Allow the banana bread to cool in the pan for 10 minutes, then carefully transfer to a wire rack to cool completely.
