Malaysian Caramel Sugar Cookies

- 2 cups all-purpose wheat flour
- 1 cup Malacca sugar
- ½ cup margarine, softened
- 1 large egg
- 1 tsp vanilla extract
- ½ tsp baking soda
- ½ tsp salt

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a mixing bowl, cream together the soft margarine and Malacca sugar until light and fluffy.

Beat in the egg and vanilla extract until well combined.

In a separate bowl, whisk together the wheat flour, baking soda, and salt.

Gradually add the dry mixture to the wet mixture, stirring until a dough forms.

Roll the dough into small balls (about 1 inch in diameter) and place them on the prepared baking sheet, spacing them about 2 inches apart.

Flatten each dough ball slightly with the palm of your hand and sprinkle a bit of extra Malacca sugar on top, if desired.

Bake in the preheated oven for 10-12 minutes, or until the edges are just lightly golden.

Remove from the oven and allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
