Refreshingly tangy salad with sweet mango and zesty lime dressing.
ingredients
- 1 cup quinoa
- 1 ¾ cups water
- 1 mango, diced
- 1 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tbsp olive oil
- Juice of 2 limes
- Salt and pepper to taste

Rinse quinoa and cook according to package instructions.

In a bowl, whisk together olive oil, lime juice, salt, and pepper.

Combine cooked quinoa with mango, bell pepper, red onion, and cilantro.
