ingredients
- 4 salmon fillets (6 oz each)
- 1/4 cup maple syrup
- 2 tablespoons soy sauce
- 2 tablespoons Dijon mustard
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 pound baby potatoes, halved
- 2 cups Brussels sprouts, halved
- 2 cups baby carrots
- 1 red onion, sliced
- Salt and pepper to taste
- Fresh parsley, for garnish
steps
- 1.
Preheat the oven to 400°F (200°C). In a small bowl, whisk together the maple syrup, soy sauce, Dijon mustard, and minced garlic.
- 2.
Place the salmon fillets in a baking dish and pour half of the maple glaze over them, ensuring they are well coated. Reserve the remaining glaze for later.
- 3.
In a separate mixing bowl, combine the halved baby potatoes, Brussels sprouts, baby carrots, and sliced red onion. Drizzle with olive oil and season with salt and pepper. Toss to coat the vegetables evenly.
- 4.
Spread the vegetables on a baking sheet in a single layer. Place the baking sheet and the salmon dish in the preheated oven. Roast the vegetables for 25-30 minutes, or until golden and tender. Bake the salmon for 12-15 minutes, until cooked through.
- 5.
Remove the salmon from the oven and brush the remaining maple glaze over the fillets. Let it rest for a couple of minutes.
- 6.
Serve the maple-glazed salmon on a bed of roasted vegetables and garnish with fresh parsley. Enjoy this delightful and healthy dinner!
