Secondary Sodium Metabisuphite and Potassium Sorbate (per manufacturer’s direction) Lemon: ½ (zest and juice) Black Tea: 1 tea bag Let sit at cellar or room temperature until clear"

- 2 grams Lalvin D-47 yeast
- 2.50 grams GoFerm
- 4.10 grams nutrients
- 2.59 lbs Bearded Tree Wildflower Honey
- 12 oz Grade "B" Maple Syrup
- 2 oz Light Brown Sugar
- Lemon zest and juice
- 1 black tea bag
- Sodium Metabisuphite
- Potassium Sorbate
steps
- 1.
Boil 2 quarts of water, remove from heat, add tea bag and steep for 10 mins.
- 2.
In a sanitized fermenter, mix honey, maple syrup, brown sugar, tea, lemon, and water.
- 3.
Cool mixture to room temp, add yeast, nutrients, and GoFerm.
- 4.
Ferment for 1 week, add nutrients at intervals.
- 5.
Rack into secondary, add Sodium Metabisuphite, Potassium Sorbate, and let sit until clear.
- 6.
Bottle and age for 6-12 months before enjoying.
