ingredients
- 1 cup strong brewed coffee, cooled
- 1 tablespoon unsweetened cocoa powder
- 2 tablespoons matcha green tea powder, plus extra for dusting
- 4 large egg yolks
- 1/2 cup granulated sugar
- 1 cup heavy cream
- 1 cup mascarpone cheese
- 24 ladyfinger cookies
- Pinch of salt
steps
- 1.
In a bowl, whisk together brewed coffee, cocoa powder, and 1 tablespoon of matcha powder until smooth. Set aside.
- 2.
In a separate bowl, whisk egg yolks and sugar together until pale and creamy.
- 3.
Gently fold in mascarpone cheese into the egg mixture until combined.
- 4.
In another bowl, whip heavy cream to stiff peaks. Gradually fold the whipped cream into the mascarpone mixture, being careful not to deflate it.
- 5.
Dip each ladyfinger into the matcha coffee mixture for just a few seconds, ensuring they are soaked but not soggy.
- 6.
Arrange a layer of soaked ladyfingers in a 9x9-inch dish. Spread half of the mascarpone mixture on top, smoothing it out evenly.
- 7.
Add another layer of dipped ladyfingers followed by the remaining mascarpone mixture. Smooth the top with a spatula.
- 8.
Cover and refrigerate for at least 4 hours or overnight to let the flavors meld.
- 9.
Before serving, dust with cocoa powder and sprinkle with matcha dust for an elegant finish.
