- 1 cup ground lamb
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup feta cheese, crumbled
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp red pepper flakes
- Salt and pepper, to taste
- 1 package of phyllo dough (about 1 lb)
- 1/4 cup olive oil, for brushing
- Fresh parsley, for garnish

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a skillet over medium heat, sauté the finely chopped onion until translucent. Add minced garlic and cook for another minute.

Stir in the ground lamb, cumin, coriander, red pepper flakes, salt, and pepper. Cook until the lamb is browned and fully cooked. Remove from heat.

Mix in the sun-dried tomatoes and feta cheese until well combined. Allow to cool slightly.

Carefully lay out a sheet of phyllo dough and brush it lightly with olive oil. Layer another sheet on top, brushing again with oil.

Place a spoonful of the lamb mixture at one end of the phyllo. Fold the sides in and roll tightly to form a cylinder.

Place the rolls seam-side down on the prepared baking sheet and brush with more olive oil.

Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.
