- 2 lbs russet potatoes
- 4 tbsp unsalted butter
- 3 tbsp white miso paste
- 4 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tsp sesame oil
- ½ tsp red pepper flakes (optional)
- Salt, to taste
- 2 green onions, sliced (for garnish)
- Fresh cilantro (for garnish, optional)

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Wash and cut the russet potatoes into fries, keeping them even in size for consistent cooking.
