Tasty Moroccan Lentil Chicken Stew with Green Beans and Sweet Potato
ingredients
- 1 cup green beans, trimmed and halved
- 1 cup lentils, rinsed
- 4 cups chicken stock
- 1 sweet potato, diced
- 1 apple, diced
- 1 bell pepper, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp turmeric
- 1/2 tsp cinnamon
- Salt and pepper to taste
- Olive oil for cooking

In a large pot, heat olive oil over medium heat and sauté onions and garlic until fragrant.

Add in diced bell pepper, sweet potato, apple, cumin, turmeric, and cinnamon, cooking until softened.

Stir in lentils, green beans, and chicken stock. Bring to a boil then reduce heat to simmer for 20 minutes.
