A hearty vegan stew with added protein from vegan ground meat for a satisfying meal.
ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 sweet potato, diced
- 1 zucchini, chopped
- 1 bell pepper, diced
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 cup cooked lentils
- 1 cup vegan ground meat
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste

Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.

Add carrots, celery, sweet potato, zucchini, and bell pepper. Cook for 5 minutes.

Stir in diced tomatoes, vegetable broth, cooked lentils, vegan ground meat, thyme, rosemary, salt, and pepper.
