Spiced Bengali Lentil Chicken Oats

- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup dried red lentils, rinsed
- 1 cup rolled oats
- 2 cups spinach, chopped
- 1 onion, finely chopped
- 4 garlic cloves, minced
- 1-inch fresh ginger, grated
- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon ground coriander
- 1 teaspoon red chili powder (adjust according to preference)
- 1 teaspoon garam masala
- Salt to taste
- Fresh cilantro leaves, for garnish

In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds until fragrant.

Add the onion, garlic, and ginger, and sauté until the onion becomes translucent and slightly golden.

Stir in the turmeric powder, coriander, red chili powder, and salt. Cook for another minute, allowing the spices to release their flavors.

Lower the heat and add the lentils along with 4 cups of water. Cover the pot and simmer for about 20 minutes or until the lentils are cooked through and tender.
