NOLA Turkey Jambalaya Bowl

A savory and spicy jambalaya bowl made with ground turkey and loaded with Cajun flavors from bell peppers, tomatoes, and sausage. Paleo-friendly and perfect for a New Orleans-inspired dinner.

- 1 lb ground turkey
- 1/2 lb smoked sausage, sliced
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 can diced tomatoes
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp dried oregano
- 1/2 tsp cayenne pepper
- Salt and pepper, to taste
- 4 cups cauliflower rice
- Olive oil, for cooking

In a large skillet over medium heat, cook the ground turkey until browned, then remove from skillet and set aside.

Add the sliced sausage to the skillet and cook until browned, then remove from skillet and set aside.

In the same skillet, add some olive oil and sauté the onion, bell peppers, and garlic until softened.

Stir in the diced tomatoes, smoked paprika, cumin, oregano, cayenne pepper, and salt and pepper to taste.

Add the cooked ground turkey and sausage back to the skillet and stir to combine.

Let the mixture simmer together for 5-10 minutes until all flavors are well combined.

In a separate skillet, cook the cauliflower rice in some olive oil until lightly browned.

Serve the jambalaya mixture over the cauliflower rice.
