Nutty Twist on Brown Ale

- 9 lbs. Maris Otter Pale Malt
- 1 lb. Crystal Malt (40L)
- 1 lb. Munich Malt
- 0.5 lb. Chocolate Malt
- 0.5 lb. Victory Malt
- 1 lb. Dark Honey
- 1 oz. Northern Brewer Hops (bittering)
- 0.5 oz. East Kent Goldings Hops (flavor)
- 1 packet English Ale Yeast
- 5 oz. priming sugar (for bottling)
- Water (to make up 5 gallons)

Heat 3 gallons of water to 165°F and steep the Crystal, Munich, Chocolate, and Victory malts in a grain bag for 30 minutes.

Remove the grain bag, allowing it to drain into the brew pot, and bring the wort to a boil.

Once boiling, add the Northern Brewer hops, boil for 60 minutes.

In the last 15 minutes of the boil, add the East Kent Goldings hops and stir in the dark honey.

After the boil, cool the wort quickly using a wort chiller or ice bath.

Transfer to a sanitized fermenter and add water to reach 5 gallons.

Pitch the English Ale yeast and seal with an airlock.
- 8.
Ferment for 1-2 weeks at around 68-72°F until fermentation appears complete.
- 9.
Bottle with priming sugar and let condition for an additional 2 weeks before chilling and enjoying.
