ingredients
- 3 ripe bananas, mashed
- 2 eggs
- 1/2 cup coconut oil
- 1/2 cup non-dairy milk
- 1 tsp vanilla extract
- 1 cup gluten-free flour blend
- 1/2 cup rolled oats, plus extra for sprinkling on top
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup chopped walnuts (optional)

Preheat oven to 350°F. Grease a 9x5 loaf pan and set aside.

In a large bowl, mix together mashed bananas, eggs, coconut oil, non-dairy milk, and vanilla extract.

Fold in gluten-free flour, rolled oats, baking soda, baking powder, and salt. Add chopped walnuts if desired.

Pour batter into prepared loaf pan and smooth the top with a spatula. Sprinkle additional rolled oats on top.
