Tender boneless lamb shoulder cooked with perfectly caramelized root vegetables, garlic and onions.
ingredients
- 2 lb boneless lamb shoulder, cut into large chunks
- 4 large carrots, peeled and sliced
- 4 parsnips, peeled and sliced
- 2 onions, chopped
- 4 garlic cloves, chopped
- 3 tbsp olive oil
- 2 tsp salt
- 1 tsp black pepper
- 1 tbsp dried rosemary

Preheat oven to 350°F.
- 2.
In a large pot, heat olive oil over medium heat.

Add lamb and brown on all sides.
- 4.
Add onions and garlic, sauté until onions are translucent.
- 5.
Add carrots, parsnips, dried rosemary, salt and pepper.
- 6.
Stir everything together and cover with a tight lid.
- 7.
Transfer to oven and bake for 2 hours.
