Orange Blossom Citruglyn

- 15 lbs. wildflower honey
- Zest from 10 oranges
- Juice from 5 oranges (about 2 cups)
- 5 tsp. orange blossom water
- 1 packet of Lalvin D47 yeast
- Yeast nutrient

In a large pot, heat 2 gallons of water to about 160°F.
- 2.
Gradually stir in the wildflower honey until fully dissolved.
- 3.
Add the orange zest and juice to the honey-water mixture.
- 4.
Remove from heat and cool the mixture to around 70°F.
- 5.
Stir in the orange blossom water and yeast nutrient.
- 6.
Sprinkle the Lalvin D47 yeast on top of the mixture (do not stir).
- 7.
Seal the fermenter with an airlock and allow to ferment for 3-4 weeks, or until bubbling has slowed significantly.
- 8.
Once fermentation is complete, siphon the melomel into a clean secondary fermenter, leaving sediment behind.
- 9.
Age for at least an additional month for flavors to mature, then bottle and enjoy your refreshing Orange Blossom Harmony Melomel!
