Ricotta Chicken Parmesan Meatballs
ingredients
- 1 lb ground chicken
- 1/2 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 tbsp chopped parsley
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup olive oil

Preheat oven to 375°F.

Mix chicken, ricotta, Parmesan, breadcrumbs, egg, garlic, parsley, salt, and pepper.

Shape mixture into meatballs and coat with extra breadcrumbs.
