Passion Fruit and Pistachio Baklava

- 1 package phyllo dough (16 oz), thawed
- 2 cups pistachios, chopped
- 1 cup unsalted butter, melted
- 1 cup sugar
- 1 teaspoon ground cinnamon
- 1 cup passion fruit puree
- 1 cup water
- 1 teaspoon vanilla extract

Preheat your oven to 350°F (175°C).

In a mixing bowl, combine chopped pistachios, sugar, and ground cinnamon. Set aside.

Lay one sheet of phyllo dough in a greased 9x13-inch baking dish, brushing it with melted butter.

Repeat the process, layering at least 8 sheets, each brushed with butter.
- 5.
Spread half of the pistachio mixture evenly over the phyllo layers.
- 6.
Layer another 5 sheets of phyllo, brushing each with butter.
- 7.
Add the remaining pistachio mixture and layer another 8 sheets of phyllo, buttering each one.

Once assembled, cut the baklava into diamond or square shapes.
- 9.
Bake for 45-50 minutes, or until golden brown.

In a saucepan, combine passion fruit puree, water, and vanilla extract. Bring to a boil and simmer for 10 minutes.

Pour the passion fruit syrup over the hot baklava and let it cool completely to soak in.
