Three Cheese Pesto Chickpea Caprese Burger
ingredients
- 1 can of chickpeas, drained and rinsed
- 1/3 cup pesto sauce
- 1/4 cup breadcrumbs
- 1 egg
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 hamburger buns
- 1 large tomato, sliced
- 8 slices of mozzarella cheese
- 8 slices of cooked turkey bacon
- 8 slices of sharp cheddar cheese
- 1/2 cup crumbled feta cheese
steps
- 1.
In a food processor, pulse chickpeas until slightly mashed.
- 2.
In a bowl, mix chickpeas, pesto, breadcrumbs, egg, garlic powder, salt, and pepper. Form mixture into 4 patties.

Heat a skillet over medium heat and cook patties for 4-5 minutes on each side.
- 4.
Toast hamburger buns in the skillet.
- 5.
Assemble burgers with chickpea patty, tomato slices, mozzarella, sharp cheddar, feta, and turkey bacon. Serve hot and enjoy!
