- 12 lbs Orange Blossom Honey
- 15 lbs Plums, sliced and pitted
- D47 Yeast
- Water to fill up to 5 gallons

In a large brew kettle, mix the orange blossom honey with warm water, stirring until fully dissolved.

Add additional water to reach a total volume of 5 gallons.

Pour the sliced and pitted plums into a sanitized fermentation vessel.

Add the cooled honey-water mixture over the plums.
