ingredients
- 50g boiled red cow peas
- 1/4th cup boiled broccoli
- 1/8 cup shredded carrots
- 2 tbsp chopped onions
- 2 tbsp chopped tomatoes
- 1/4th cup soaked poha (flattened rice)
- 2 tsp olive oil
- 2-3 tsp lemon juice
- 2 tbsp roasted groundnuts
- Salt to taste
- ¼ tsp green chillies
- 2 tsp coriander leaves

Heat olive oil in a pan and sauté chopped onions until translucent.

Add chopped tomatoes and cook until softened.
- 3.
Stir in boiled red cow peas, shredded carrots, and boiled broccoli.
- 4.
Sprinkle salt and green chillies, mix well.
- 5.
Gently incorporate soaked poha and cook for a few minutes.
- 6.
Finish off by adding lemon juice and roasted groundnuts.
- 7.
Garnish with fresh coriander leaves and serve hot.
