- 1 cup quinoa
- 2 cups water
- 1 cup cottage cheese (paneer)
- 1 cup mixed bell peppers, diced
- 1 cup spinach, chopped
- 1/2 cup peas (fresh or frozen)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin powder
- Salt, to taste
- 2 tablespoons olive oil
- Fresh coriander for garnish

Rinse the quinoa under cold water and drain. In a saucepan, bring the 2 cups of water to a boil, then add the quinoa. Reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed and quinoa is fluffy.
