Avocado Egg Power Bowl
ingredients
- 2 large ripe avocados, halved and pitted
- 4 large eggs
- 2 cups fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1 teaspoon olive oil
- Salt and pepper, to taste
- Red pepper flakes, optional
steps

In a skillet, heat olive oil over medium heat.

Add chopped spinach and sauté until wilted, about 2 minutes.
- 3.
In a bowl, whisk together the eggs, and season with salt and pepper.
- 4.
Pour the egg mixture into the skillet with spinach and scramble until cooked through.
- 5.
Meanwhile, scoop the avocado flesh into a bowl and mash lightly with a fork, seasoning with salt and pepper.
- 6.
Serve the mashed avocado on plates and top with the scrambled egg mixture.
- 7.
Sprinkle with crumbled feta cheese and add red pepper flakes if desired for extra heat.
