Flavorful Herb and Spice Chicken and Dumplings
ingredients
- 1.5 lbs boneless, skinless chicken breasts, cubed
- 2 cups chicken broth
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 cup frozen peas
- 1 tsp dried thyme
- ½ tsp dried rosemary
- ½ tsp dried sage
- ½ tsp dried oregano
- Salt and pepper to taste
- 2 cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp salt
- ½ cup milk
- 4 tbsp butter, melted
- Fresh parsley for garnish

In a large pot, sauté the chicken until browned. Remove from the pot and set aside.

In the same pot, sauté the onion and garlic until translucent.

Add the carrots, celery, peas, thyme, rosemary, sage, oregano, salt, and pepper. Cook for 5 minutes.

Return the chicken to the pot and pour in the chicken broth. Bring to a boil, then reduce heat and let simmer for 15 minutes.

Meanwhile, in a mixing bowl, combine the flour, baking powder, and salt. Stir in the milk and melted butter until a soft dough forms.

Drop spoonfuls of the dumpling batter into the simmering stew. Cover and cook for 10 minutes until the dumplings are cooked through and fluffy.

Serve the herb and spice chicken and dumplings hot, garnished with fresh parsley.
