ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tbsp olive oil
- 1/2 red onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1/2 c. corn, frozen
- 1/2 cup snow peas
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tsp cornstarch
- 1 tsp red pepper flakes

Cook quinoa in vegetable broth for 15 minutes. Set aside.

Heat olive oil in a large skillet.

Add onions and garlic. Sauté for 2 minutes.

Add bell peppers, zucchini, and corn. Sauté for 5 minutes.

Add snow peas and sauté for 3 minutes.

In a small bowl, mix soy sauce, honey, cornstarch, and red pepper flakes.

Pour sauce over veggies and stir evenly.

Add cooked quinoa and stir-fry for another 2 minutes.
