Salmon and Cucumber Sushi Stacks

- 1 lb fresh salmon, skinless and boneless
- 1 large cucumber
- 1 cup sushi rice
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 avocado, sliced
- 4 nori sheets
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon toasted sesame seeds
- Wasabi and pickled ginger for serving

Cook sushi rice according to package instructions and let it cool.

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Drizzle over the cooled sushi rice and gently fold to combine.

Thinly slice the salmon and cucumber.

Place one nori sheet on a cutting board. Spread a few tablespoons of sushi rice evenly on top, then place a layer of salmon.
