Hearty Lentil & Sausage Skillet Bowl
ingredients
- 1 cup uncooked lentils
- 2 tablespoons olive oil
- 1 pound sausage (Italian or your choice)
- 1 cup mushrooms, sliced
- 1 medium onion, diced
- 1 green bell pepper, diced
- 4 cloves garlic, minced
- 1 can (15 oz) tomato sauce
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)

Rinse lentils under cold water and cook according to package instructions; set aside.

In a large skillet, heat olive oil over medium heat.

Add sausage to the skillet, breaking it apart with a spatula, and cook until browned (about 5-7 minutes).

Stir in onions, green bell pepper, and mushrooms; cook until softened (about 5 minutes).

Add garlic and sauté for another minute until fragrant.

Pour in the tomato sauce and stir in the Italian seasoning; simmer for 5 minutes.
