Bacon Bliss Jam on Flat Top
ingredients
- White Onion - 6 lbs
- Bacon - 5 lbs (sliced into small pieces)
- Balsamic Vinegar - 4 fl oz
- Black Pepper - 1/3 cup
- Salt - 1 tablespoon
- Brown Sugar - 1/4 cup
- Brown Sugar - 3 tablespoons

Finely Chop white onions and set aside.

Preheat the flat top grill to medium heat. Add the bacon pieces and cook until crispy, about 8-10 minutes. Remove the bacon and let drain on paper towels, reserving the grease on the grill.

Leave approximately 2 tablespoons of the bacon grease on the grill and add the chopped onions. Sauté on the grill until caramelized, stirring occasionally, about 15-20 minutes.

Return 80% the crispy bacon pieces to the grill with the onions. Stir in the balsamic vinegar, black pepper, salt, and brown sugar.

Reduce heat to low and let the mixture simmer on the grill for about 25-30 minutes, stirring occasionally, until it thickens and flavors meld.

Remove from grill and process with Robo Coup

Cut the remaining bacon into half inch pieces, and put them into the Robo Coup with processed recipe. We want half inch pieces of bacon spread evenly throughout the mix.

Allow the jam to cool slightly before transferring it to sterilized jars. Store in the refrigerator.
