Colorful Ground Turkey Veggie Bake
ingredients
- 1 lb ground turkey
- 4 medium tomatoes, diced
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 1 cup bell pepper, chopped
- 1 cup zucchini, diced
- 1 cup fresh spinach, chopped
- 1 cup cooked quinoa (or rice)
- 1 cup shredded mozzarella cheese
- 2 tsp Italian seasoning
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil
- Fresh basil for garnish

Preheat oven to 375°F (190°C).

In a large skillet, heat olive oil over medium heat.

Add chopped onion, bell pepper, zucchini, and garlic; sauté until softened.

Stir in ground turkey, Italian seasoning, salt, and pepper; cook until turkey is no longer pink.

Add diced tomatoes, fresh spinach, and quinoa into the skillet, mixing thoroughly.

Transfer the mixture to a greased casserole dish.

Top with shredded mozzarella cheese evenly.

Bake for 25-30 minutes, or until the cheese is bubbly and golden.

Remove from oven and let cool for a few minutes.

Garnish with fresh basil before serving.
