Savory Herb Crusted Beef Medallions

Juicy beef medallions coated in a flavorful herb crust, served with a side of roasted vegetables and a tangy mustard sauce.
ingredients
- 1.5 lbs beef tenderloin, cut into 1-inch thick medallions
- 2 tbsp olive oil
- 1 cup breadcrumbs
- 2 tbsp fresh parsley, finely chopped
- 1 tbsp fresh rosemary, finely chopped
- 1 tbsp fresh thyme, finely chopped
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and black pepper, to taste
- 4 cups assorted vegetables (such as carrots, zucchini, and mushrooms), chopped
- 2 tbsp Dijon mustard
- 2 tbsp mayonnaise
- 1 tbsp lemon juice
steps
- 1.
Preheat the oven to 400°F (200°C).
- 2.
Pat the beef medallions dry with paper towels, then season both sides generously with salt and black pepper.
- 3.
In a shallow dish, combine the breadcrumbs, parsley, rosemary, thyme, garlic powder, onion powder, salt, and black pepper.
- 4.
Dip each beef medallion into the breadcrumb mixture, pressing gently to ensure the crust adheres.
- 5.
In a large skillet, heat the olive oil over medium-high heat. Add the beef medallions and sear for 2-3 minutes per side until browned.
- 6.
Transfer the seared beef medallions to a baking sheet and bake in the preheated oven for 8-10 minutes for medium-rare, or longer if desired doneness.
- 7.
While the beef is cooking, toss the chopped vegetables with olive oil, salt, and pepper, then spread them on another baking sheet. Roast them in the oven for about 15-20 minutes or until tender.
- 8.
In a small bowl, whisk together the Dijon mustard, mayonnaise, and lemon juice, then season with salt and black pepper.
- 9.
Serve the herb-crusted beef medallions on a plate with a side of roasted vegetables and drizzle the mustard sauce over the dish.
