- 1 cup dried lentils
- 1 onion, diced
- 3 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 6 cups vegetable broth
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp turmeric
- Salt and pepper to taste
- 4 cups fresh spinach
