Hearty Savory Pizza Oatmeal

- 4 cups gluten-free rolled oats
- 3 ¼ cups unsweetened almond milk
- 1 ⅓ cups pizza sauce (store-bought or homemade)
- 1 ½ teaspoons garlic powder
- 1 ½ teaspoons onion powder
- 1 ½ teaspoons Italian seasoning
- 1 teaspoon smoked paprika
- 2 medium bell peppers, diced
- 1 medium zucchini, diced
- 1 ½ cups fresh spinach, chopped
- 1 cup mushrooms, sliced
- ¾ cup olives, sliced
- Fresh basil leaves for garnish (optional)

Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.

In a large mixing bowl, combine rolled oats, almond milk, garlic powder, onion powder, Italian seasoning, and smoked paprika. Mix well until combined.

Pour half of the pizza sauce into the oatmeal mixture and stir to integrate the flavors.

Fold in the diced bell peppers, zucchini, chopped spinach, sliced mushrooms, and olives.

Spread the oatmeal mixture evenly in the prepared baking pan.

Top with the remaining pizza sauce, drizzling it evenly over the surface.

Bake in the preheated oven for 40-45 minutes or until set and lightly golden on top.

Remove from the oven, let it cool for a few minutes, then cut into squares.
