- 4 large bell peppers (any color)
- 1 lb ground turkey
- 1 cup cooked quinoa
- 1 cup canned black beans, rinsed and drained
- 1 cup diced tomatoes (canned or fresh)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup shredded low-fat cheese (optional)
- Fresh cilantro for garnish (optional)

Slice the tops off the bell peppers and remove the seeds. Place them cut-side up in a baking dish.

In a skillet over medium heat, sauté the onion and garlic until soft, about 3-4 minutes.

Add the ground turkey to the skillet, cooking until browned and fully cooked, about 7-10 minutes.
