Roasted tomatoes blended with aromatic herbs for a rich marinara.
ingredients
- 1 lb ripe tomatoes
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 onion, diced
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- Salt and pepper to taste
steps

Preheat oven to 400°F.

Cut tomatoes in half, place on baking sheet.
- 3.
Drizzle with 1 tbsp olive oil, sprinkle with salt.
- 4.
Roast for 30 mins until soft.
- 5.
Heat remaining oil in a pan, sauté garlic and onion.
- 6.
Add roasted tomatoes, oregano, red pepper, salt, pepper.
- 7.
Simmer for 20 mins, blend until smooth.
