Spicy Pulao Powder

- 4 dried red chilies
- 1 cinnamon stick
- 1 tablespoon cumin seeds
- 1 tablespoon coriander seeds
- 1 tablespoon fennel seeds
- 1 teaspoon cardamom pods
- ½ teaspoon black peppercorns
- 4 cloves
- 2 bay leaves
- 1-star anise
- 1 tablespoon dried mint leaves
- 1 tablespoon dried fenugreek leaves
- 1 tablespoon turmeric powder
- ½ teaspoon asafoetida
- 1 tablespoon salt

In a dry skillet over medium-low heat, toast the dried red chilies, cinnamon stick, cumin seeds, coriander seeds, fennel seeds, cardamom pods, black peppercorns, cloves, bay leaves, and star anise until fragrant, stirring occasionally.

Remove the toasted spices from the skillet and let them cool completely.

Once cooled, grind the spices along with the dried mint leaves, dried fenugreek leaves, turmeric powder, asafoetida, and salt to a fine powder using a spice grinder or mortar and pestle.
